Frozen Meatballs

I’m happy to report that the fridge arrived last night! Everything was insulated well, so the food casualties were minimal- YAY! Needless to say, last night I was a cooking machine! I sliced up eight chicken breasts and cooked them in the crock pot. I even cooked and froze 1 lb of bacon (we’ll see how that turns out). I had 2 lbs sausage, 1 lb ground bison, and 3 lbs ground turkey on my hands. What to do?

I browned and froze the sausage and some of the turkey in 1 lb portions to use later in spaghetti sauce, chili, casseroles- really the options are endless! I may be doing this on a more regular basis!

By the time I was finished with all the cooking, I was pooped. I crashed at 10pm, and Zach was kind enough to the divide up the cooked chicken from the crock pot and freeze.

I did try one really exciting new recipe (thanks Martha Stewart). I’ve become obsessed with making double batches of cookie dough and freezing perfect little individual cookie dough balls- this way, I can just take out a couple to bake at a time (that is, if we don’t eat the entire stash of frozen cookie dough balls!). What’s better than a warm cookie, fresh from the oven?! Seriously- try this idea.

Ok- back to the Martha recipe. MEATBALLS! Ok, so I took a ton of creative liberties, but they still smelled awesome! I also made a double batch of these, but the following recipe is for a single batch.


INGREDIENTS
  • 1 lb lead ground beef (I used 1 lb ground bison and 1 lb ground turkey)

  • 2 slices of bacon or 2 ounces, finely chopped (I used kitchen scissors for
    this- what a great idea!)

  • 1/4c chopped fresh parsley

  • 2 garlic cloves, minced (I usually buy the jar- best shortcut ever)

  • 3 Tbs grated Parmesan cheese

  • 1 Tbs plain dried breadcrumbs (I used Italian breadcrumbs because that’s
    what was in my pantry)

  • 1 large egg

  • 1/8 tsp ground nutmeg

  • ½ tsp coarse salt

  • ¼ tsp pepper


  1. In a large bowl, combine all of the ingredients.

  2. Scoop out about a tablespoon of the mixture and roll into a ball. But feel free to
    make them any size you want!

  3. Arrange a single layer on a baking sheet and freeze for 1 hour.

  4. Once frozen, transfer to an airtight container or a resealable plastic bag. Be sure to write the cooking directions and date on your container or bag.

  5. To cook frozen (no need to thaw!) meatballs, take straight from freezer and cook about 15 min in 400 degree oven. OR simmer, covered, in liquid until cooked through. About 10 min depending on size.

The meatballs should be used within the next 3 months. I plan on using them in soups and sauces!

Grown-up Lesson #526

Being a grown-up is hard (just like knots- about two of you readers will get this, but it's totally worth it!) We asked for car tires for Christmas this year. In our attempt to be good stewards, we clip coupons and brown bag our lunch to work/school. A meticulous budget is kept detailing how every cent is spent. Don't even get me started on insurances... I had no idea how much growing up I needed to up, but I'm loving this slightly stressful/immensely rewarding journey called adulthood.

Grown-up Lesson #526: Buying a refrigerator out of necessity and not for a kitchen make-over.

Last Monday, Zach was getting me a bowl of ice cream before we settled down to watch an episode of How I Met Your Mother (one of our favorite TV shows). We were alarmed to see that our entire carton of ice cream was soup. Chalking it up to the freezer vent being blocked because of the ridiculous amount of food we have stock-piled in there, we rearranged a few things in the freezer and I sipped my ice cream soup. The next morning, we checked on things, and we still had a carton of ice cream soup sitting in our freezer. On Wednesday, we called a repair man to take a look at it, and $80 and 15 minutes later he told us what we already suspected- we needed to buy a new refrigerator. That process was relatively painless because our awesome landlords (thanks sonny and caryl) said they would take care of the purchase. BTW- I am super excited for the day I actually get to pick out some great kitchen appliances. Doesn't Kelly Rippa make Electrolux look so glamorous? I don't know about all of you, but I depend on the casseroles I freeze for my reserve stash on those nights when I'm surprised with 4 hungry medical students at my house. And when chicken breasts are on sale at Publix, I buy enough to feed my hungry husband for the whole month! Needless to say, the fridge breaking was devastating to my planned menus...

The new fridge arrives tonight. We haven't opened the doors since the repairman gave us the news, so I'm hoping that enough cold air was trapped inside so that everything hasn't spoiled by now. Best case scenario- I'll be able to cook what thawed out from the freezer and will re-freeze a new stash of meals! (Hint: my next cooking post will be something freezer-friendly!)

Moral of the Grown-up Lesson... you can't always plan for the unexpected, but you can plan on the unexpected!

2011: ready or not, here we come!

January has been a very busy month and typical of the rest of the year. We’ll just put this month on repeat and roll with it! Zach had his first test of the semester to engage his rear in “study mode”. I had my first (of many) business trips. Luckily, the test and my trip coincided nicely- I hope that happens more often!

I am now working on a USPS contract- think about it, how many post offices are there nationwide? We are working on sites in the northeast right now, and I’m excited that my work is bringing me near family and friends. The day job isn’t very glamorous, but seeing my loved ones makes it entirely more wonderful! I’m serious- not glamorous at all…

I even got to see snow in South Carolina! Ok… that doesn’t count!
Confession: I love the organization. Each mail carrier has this little work space to get organized each day. I could be a mailwoman!
I’m home for a week before flying off to Delaware, Virginia and Maryland next Tuesday. I’m really looking forward to seeing family every night I’m away. Zach is even flying up the weekend after my trip, and we are going skiing with my Dad!

I haven’t been cooking anything lately, but that is going to change this week! Look forward to a blog post! Yummmmm

My half-marathon training is still trucking along. I scheduled a couple races to make sure I kept up my training, and I have a 15K this Saturday.

I’ve also been doing a Beth Moore Bible Study (love her!) We are on Week Three, and it has been an amazing journey so far!

2011: New Year, New Goals

Zach and I have been on the road for the past two weeks, and it was incredible! First stop- Pensacola! We spent the week preceding Christmas with Zach's family and enjoyed relaxing, last minute Christmas shopping, and eating (a lot). We headed up to Starkville on Christmas eve just in time to meet up with my brother, sisters, niece and parents. We woke up to a... wait for it... WHITE CHRISTMAS!


Being in Starkville was wonderful. It's a place that is so dear to us. We spent Christmas eve in the church where we were married, ate at the Ritz- where we had our wedding reception, and ran on campus where Zach proposed. Maybe we'll end up back there one day??


New Years was spent in Jacksonville for the Gator Bowl! MSU really showed up, and we were so proud! We ran a 5K, watched the parade, and spent new years eve with the MSU alumni association. Couldn't have asked for a better end to 2010!



2011 List of Goals

1. Ring (literally with cow bells) in the New Year with loved ones. Check.
2. Beat Michigan. Check.


3. Complete First Half Marathon with Mary, Emma, and all of the Disney Princesses.
4. Serve the Lord with my husband in Nicaragua.
5. Read entire Harry Potter series before the final movie is released.
6. Write more letters to loved ones.
7. Master-- errr become better at-- new hobbie:- photography, sewing, cooking
8. Incorporate green principles into our lifestyle.

We had such a wonderful time at the game! A Bulldog victory was just the ticket for a wonderful first day of the new year!
